Stuffed Pepper Skillet


Ingredients

  • 1 tbsp olive oil

  • 1 lb ground turkey

  • 1 medium yellow onion, chopped

  • 1 tbsp italian seasoning

  • 2 tsp ground cumin

  • 1 tsp salt

  • 1/2 tsp ground pepper

  • 3 cloves minced garlic

  • 12 oz frozen spinach (thawed or microwaved)

  • 1 red bell pepper, diced

  • 1 green bell pepper, diced

  • 1 cup cooked brown rice

  • 1 15-oz can fire roasted diced tomatoes

  • 1 8 oz can no salt tomato sauce

  • 1 tbs Worcestershire sauce

  • 1/2 cup shredded cheddar cheese

  • 1/2 cup shredded pepper jack cheese


Directions

  1. Place olive oil in pan, add turkey break into small pieces with wooden spoon, add onion, season with salt, pepper, cumin, and italian seasoning. Cook until meat is browned and onion is tender (about 7 min)

  2. Add garlic and stir until fragrant (about 1 min), add spinach and break apart to evenly distribute between meat

  3. Add red pepper, green pepper, tomatoes, tomato sauce, Worcestershire, and rice

  4. Stir all the ingredients together, let cook for a few minutes

  5. Lower heat, add cheese, once melted on top it is ready to go!
